Food Biochemistry

Milk is the focus of research in the Laboratory of Food Biochemistry.

Milk is natural and the only diet for the newborn animal. It provides the newborn with all factors necessary for its normal growth besides all its dietary needs.

In this laboratory, we are researching the following topics in both bovine and human milk;

1. Identifying and analysing the factors that participate in host defense and nerve system function

2. Understanding the mechanism of biosynthesis and secretion of milk components

3. Maximizing the utilization of milk protein as foodstuffs
